On the south-east–facing slopes of Chablis, Les Lys parcel of the Defaix estate stands out as one of the jewels of the Premier Cru vineyards. Cultivated within the Clos du Roi, this partial monopole (3.5 ha out of the 5 ha of the climat) offers a refined expression of the Kimmeridgian terroir, combining aromatic richness, tension and remarkable ageing potential.
Terroir, Soil & Exposure
The Kimmeridgian soil at the surface differs from its marl-clay subsoil, which is poorer and more humid in depth — ideal conditions that encourage the vine to push its roots deep into the ground.
Its south-east exposure ensures generous morning sunlight and a gradual, balanced ripening of the grapes.
The average age of the vines is around 45 years, providing both concentration and complexity.
In tasting, Les Lys captivates with its aromatic finesse: bergamot, white flowers, subtle honey notes and a characteristic saline freshness.
