Origin, Soils & Terroir
This Vieilles Vignes cuvée is crafted from old parcels whose vines range from 45 to 70 years of age.
Like all wines from the Defaix estate, Vieilles Vignes is rooted in Kimmeridgian soil (clay-limestone marl from the Upper Jurassic), rich in fossilized oysters — the hallmark of Chablis’ greatest terroirs. This soil imparts a pronounced minerality, saline purity and the signature freshness of the region.
