Domaine Daniel-Étienne Defaix is the only estate in the Chablis region to produce a Bourgogne Rouge within the Chablis appellation area. The vine was planted in 1900 by Maurice-Étienne Defaix, making the resulting wines a precious rarity. From half a hectare of Pinot Noir “petit grain”, this cuvée reveals the estate’s care and elegance expressed in a different register. Crafted gently and respectfully, its supple tannins, fruit purity and saline touch offer an exceptional balance.

Soil, Terroir & Influences

The terroir is influenced by the nearby Kimmeridgian soils of Chablis, which impart a characteristic saline note to this red wine. Although the vine is planted on flatter land, its roots reach subsoils similar to those of the surrounding limestone zones—an influence clearly felt in the wine’s mineral profile.
